At Mountain and Tradition, we take chalet cuisine very seriously. Nothing leaves Chef Raphael's kitchens unless it is sure to impress. Welcome to my kitchen. I'm thilled that you want to learn about the cuisine we offer here at Mountain and Tradition. I've been lucky enough to travel and work in some of Europe's finest kitchens, including the three gourmet restaurants of the Grand Hotel Kempinski (Geneva) and the double-Michelin Starred Patrick Guilbaud (Dublin). That's where I developed the high standards which we keep in our chalets today. After years producing the finest cuisine, I'm more passionate than ever about using the best seasonal ingredients to produce flavours that the whole group can enjoy.

To create the best dishes we need to source the best ingredients from the most trusted local suppliers, always concious of what's in season. Born and bred in Les Gets, Chef Raphael has an unrivalled network of local suppliers.

Respecting the Ingredients

When you start with the right ingredients then there's no need to over-complicate them with too many additions. Just cook them correctly and let the natural flavours of the base ingredients come through.

A Matter of Context

There's a strong tradition in France that the context of the meal matters. The right food for the location, for the venue, for the season. You will find this tradition at the heart of our menus, and it goes without saying that our wines are carefully selected to complement the meals we prepare.

For Everybody

Great food should be for everyone. All our children's meals have the same care and attention in there preparation, and it goes without saying that everything is home-made.

Breakfast

  • Continental Breakfast

    A delicious breakfast buffet comprising freshly baked bread, crossiants and pastries, yoghurts, cereals, Bonne Maman jams and honey, and a basket of fresh fruits.

  • Hot Options

    To fill you up and get you set for the day. French crepes, bacon and eggs (boiled, fried or scrambled), omelette (ham, cheese or plain) or a hearty bowl of porridge.

  • Daily Specials

    Every day of your stay, a different special option. Some of our favourites include healthy smoothies, the vegan bruschetta and the classic croque monsieur.

  • Drinks

    Wake up with freshly brewed proper coffee or a selection of teas, plus refreshing fruit juices on tap.

Afternoon Tea

  • Freshly made Sandwiches

    Served every day of your stay. All our sandwiches can be adapted to suit vegetarians and vegans, as well as those with intolerances to wheat, gluten, dairy, eggs, nuts, peanuts and sesame. Soya, fish and shellfish are not used in any of our dishes.

  • Homemade Cakes

    Served every day of your stay. Please note that our cakes can not be adapted to suit those with special dietary requirements. However, each week, one of our daily cakes will be made to suit vegans and those with intolerances to wheat, gluten, dairy and eggs.

Evening Meal Menus

  • Each of our properties serves all of the below five evening meal menus. Please note that the days of the week and the order of the menus vary depending on which chalet or apartment you are staying in.

  • Day One

    Starter

    Cream of parsnip and chilli soup

    Main Course

    Traditional Burgundy beef, cooked low and slow for 6 hours in a rich red wine sauce.

    Vegetarian Option

    Kidney beans, stewed burgundy style in red wine with glazed carrots, broccoli & mushrooms and our dauphinoise potatoes

    Children's Option

    Nuggets and chips homemade with real chicken and real potatoes! Salad of cucumber and tomatoes

    Dessert

    Eton mess with fresh mango, ice cream, sorbet and homemade caramel sauce

  • Day Two

    Starter

    Lamb spring rolls, chickpea samosas and hummus with veg sticks

    Main Course

    Whole Lamb shoulder roasted "Marrakesh Tajine style" with chickpeas, turnip and carrots in the broth Served with "Ras El Hanout" scented couscous

    Vegetarian Option

    Winter vegetable and chickpea Tajine served with "Ras El Hanout" scented couscous

    Children's Option

    Spaghetti Bolognaise

  • Day Three

    Starter

    Cream of pumpkin, curry and coconut soup

    Main Course

    Chicken Supreme roasted and served with a creamed piquillos pepper sauce, buttered Savoy cabbage and confit mushrooms. Roast baby potatoes with thyme on the side.

    Vegetarian Option

    Mushroom and red peppers Croquettes served with a creamed piquillos pepper sauce, buttered Savoy cabbage and confit mushrooms. Roast baby potatoes with thyme on the side.

    Children's Option

    Roast chicken with baby potatoes and broccoli

    Dessert

    Giant profiteroles with vanilla ice cream and chocolate sauce

    Starter

    Arancini à l’arrabiata, chilli mayonnaise

    Main Course

    Chicken and leek pie under a puff pastry crust, served with sides of mash potatoes and green salad

    Vegetarian Option

    Butter bean and leek pie under a puff pastry crust, served with sides of mash potatoes and green salad

    Children's Option

    Cottage Pie, green vegetables

    Dessert

    Vanilla bean panna cotta topped with homemade blackberry jam and white chocolate crumble

  • Day Five

    Starter

    Baked Mont d'Or with bread sticks, potatoes, saucisson and pickles

    Main Course

    Pork cheek, braised slow and low in a rich tomato sauce with carrots and celeriac. Served with a celery, flat leaf parsley & granny smith apple salsa and Les Gets style potato Rapins

    Vegetarian Option

    Les Gets style potato Rapins served with baked vegetables in rich tomato sauce and a celery, flat leaf parsley & granny smith apple salsa

    Children's Option

    Risotto and ham fingers, tomato sauce with a tomato and cucumber salad

    Dessert

    Traditional apple crumble served with vanilla bean custard and very creamy vanilla triple cream

    All-inclusive wine in all of our chalets and apartments. White, red and rose wines sourced from trusted local supplier, Mas du Canal.

  • Beer

    All-inclusive lager in all of our chalets and apartments. Kronenbourg Red (4.2% abv.) is a popular all-rounder.

  • Soft Drinks

    Throughout your stay, enjoy all-inclusive fruit juice, lemonade, Coca-Cola and tonic water.

Dietary Requirements

At Mountain and Tradition, we take your dietary requirements very seriously. We only claim to offer an alternative if we know we can make it just as delicious as our guests have come to expect from our standard menus.

I'm a vegetarian. What can I expect?

All our meals have vegetarian options available. Our vegetarian dishes present a twist on the French classics, mouth-watering pies and hearty stews. If you're not a vegetarian but just fancy a meat-free night, just let us know and we can accommodate that too.

I'm a vegan. What can I expect?

All of our meals can be adapted to suit vegans. Let us know your requirements when you book, and we will make sure there are plant-based options at every meal sitting of your stay. At breakfast, plant-based milk and margarine are available. For afternoon tea, there is a vegan savoury option daily. Just make sure you're the first one back to the chalet on the day our delicious Vegan Chocolate Cake is served! Then, each evening, three courses of plant-based deliciousness await you. Our starters include soups, tapenade and samosas. For dessert, a range of sorbets and fresh fruits will excite the palate all week.

Food intolerances and allergies

We take all dietary requirements very seriously and we want our famous cuisine to be a highlight of every guest's stay. We can only cater for those with intolerances to wheat, gluten, dairy, eggs, nuts, peanuts and sesame. Soya, fish and shellfish are not used in any of our dishes. If you have a dietary need which you think we should know about, please let us know at the time of booking.
