Our Ethos in Chalet Catering

We are very proud of the food we serve. Having a company director who's one of the best Chefs in Les Gets means that time and passion is poured into every meal we prepare. Head chef Raphael wouldn't have it any other way.

Introducing Raphael, the Chef de Cuisine

Trained in the noted Thonon-Les-Bains Catering School, head chef Raphael has worked in some of Europe's finest kitchens, including the three gourmet restaurants of the Grand Hotel Kempinski (Geneva) and the double-Michelin Starred Patrick Guilbaud (Dublin). His menus celebrate the best of seasonal and regional produce. Today, as the founder of Montagne & Tradition, chef Raphael cooks exclusively for guests staying in The Alpine Lodge.

Our Food Ethos:

Raphael has a passion for combining traditional savoyard principles with modern cuisine, always concious of the context whilst focusing on the best local suppliers and ingredients.

The english word Chef comes from the french Chef de Cuisine, literally "Chief of the Kitchen". Raphael is very much that, being passionate about every aspect of composing, creating and finishing the dishes we serve. Although out chalet hosts are in your chalets with you, you'll find Raphael is there preparing, checking, taste-testing and as a constant presense to ensure the meals are of the standard we expect of ourselves.

Sourcing the Ingredients

To create the best dishes we need to source the best ingredients, being very concious of what's in season, from the best local suppliers. Being born and bred in Les Gets, Raphael has an unrivalled network of local suppliers.

Respecting the Ingredients

When you start with the right ingredients then there's no need to overly complicate them with too many additions. Just cook them correctly and let the natural flavours of the base ingredients come through.

Context Matters

There's a strong tradition in France that the context of the meal matters. The right food for the location, for the venue, for the season. You will find this tradition at the heart of our menus, and it goes without saying that our wines are carefully selected to compliment the meals we prepare.

Great food should be for everyone. All our children's meals have the same care and attention in there preparation, and it goes without saying that everything is homemade.

Option 1 - Luxury Catered Chalets: The very best of what we do

Raphael is based in The Alpine Lodge and here we serve our premium menu, the very best of what we do. We also serve the same menu in Chalet du Coin. It's cooked in this chalet by one of our other chef.

Option 3 - Our Cuisine Delivered to You!

You do not have to be staying in one of our ski chalets to have our delicious meals. We now are offering a meal delivery service.

Here we deliver 2 course evening meals, and breakfast too if you would like, to any accommodation in Les Gets or Morzine. So if you find your own self-catered chalet or self-cateref apartment then we can provide the meals for you.

This provides incredible value as a cheap self-catered apartment or self-catering chalet, along with our meals delivered, makes an very cheap ski holiday.
